Balushahi (Indian Donuts)

As a North Indian, though I reside in Mumbai, my love for desserts has no bounds. My Maternal grandmother would always make Balushahi, a wonderful delicacy, or as I would now like to call it, the “Desi Donut”, everytime we visited our native place during the vacation months. This was my first time preparing it all by myself ofcourse under the supervision of my lovely Naani over Facetime. Well, it did not turn out half as bad as I’d expected so I decided to share the recipe with ya’ll!


Ingredients


For the dough

· 2 cups of all purpose flour

· ¼ cup fresh curd

· ½ cup ghee

· 3 cups of water

· 1 ½ tsp salt

· 1 tsp baking soda

· ½ tsp baking powder


Sugar syrup

· 1 cup powdered sugar

· 1 cup water

· 1 tsp cardomom and cinnamon powder

· Pinch of saffron

· Chopped Pistachios, almonds, walnuts for garnish.


Method


1. In a large bowl, add flour, water, sugar, baking powder, baking soda and mix well. Using a spoon pour some amount of ghee onto the mixture, then add curd and knead it well.


2. Set aside the dough for 20 minutes in a bowl covered with a moist cloth.


3. In the mean time prepare the sugar syrup by adding all ingredients and cook on low heat or in a microwave.


4. Once the dough is ready, knead it well again and take a small portion out of the dough. Roll it into the shape of a ball. Using your index finger make a hollow dent in the centre. Prepare the rest of the balls in a similar manner.


5. On a medium heat pan, deep fry the balls until the turn golden brown.

6. Once done, drain the oil and drop them into warm sugar syrup. Allow them to soak for about 5 minutes.


7. Serve by garnishing with chopped nuts.
